The easiest way to determine the Bufflehead ducks in the air is their compact size and rapid wing beat. They are a good eating duck but don’t have a lot of meat to show for the effort. Many hunters elect to put the drakes on the wall rather than on the table due to their gorgeous plumage.
What does a Bufflehead duck taste like?
While it is true that they do have a more gamy flavor than other species of ducks. It’s my experience that “too gamey” is simply code word for liver flavored. More often than not when we ask our hunters if they would like us to clean their birds they don’t care to keep the merganser or buffleheads.
