Summer Fruit Skewers by Jubilee Strawberries

Looking for a light and easy dessert for your summer barbecue? Then look no further. This fabulous recipe from our friends at Jubilee Strawberries uses top quality strawbs to make the quickest, easiest but tastiest fruit skewers that you’ll try this summer. 

Jubilee Strawberry and fig skewers with honey and lavender cream

Ingredients
  1. 24 Jubilee strawberries, hulled but left whole
  2. 4 figs, trimmed and cut into quarters
  3. 2 tbsp clear, runny honey
  4. 1 tbsp flaked almonds, lightly toasted
  5. 250ml double cream
  6. 1 tbsp icing sugar, sifted
  7. 1 tsp edible unsprayed lavender flowers
  8. You will also need: 8 x wooden skewers, soaked in water for 10 minutes
Instructions
  1. Light the barbecue or preheat the grill of the oven.
  2. Thread three Jubilee strawberries and 2 fig quarters alternately onto each skewer and brush with the honey. Set aside whilst you make the cream.
  3. Grind the lavender flowers to a powder using a pestle and mortar, leaving a few left whole to serve with. Whip the cream until soft peaks form, then fold in the icing sugar and lavender powder.
  4. Grill the skewers on a hot barbecue or under the pre-heated grill for 2-3 minutes, turning carefully once or twice. Serve with a few flaked almonds and a spoonful of lavender cream.

  1. Grown on British soil, Jubilee Strawberries are available from May to September in the premium ranges of the UK’s major supermarkets; Sainsbury’s Taste The Difference, Tesco Finest, Marks & Spencer Top Tier, Asda’s Extra Special and Waitrose Specialty ranges.
